Not your average biting...

I recently adopted a cat I found at a local park in South Korea. He has been really sweet since I brought him home and loves to both cuddle and play. My only gripe is that he bites.
I know about suckling behavior, but this seems a little different. When I am getting ready for bed he will curl up next to me purring, then start biting my arms.
I've heard this is just playing, but I've found that after a moment, he clamps down harder and harder, as if trying to get a response out of me. I yell no and put him on th floor, then he comes back really ready for a fight.
He's very brave and doesn't mind getting shot with a squirt gun, so I tried hiding my arms under the covers, but clever little guy that he is, he discovered that biting hard and pulling on my cheek is an excellent way to get my arms back out (in self defense) for some more play time.
I've tried time outs, but I live in a studio and the only place to do it is in the bathroom. I'm an early riser because of my commute and getting out of bed and counting down his time out means precious sleep time draining away.
As I said, he is really sweet and I don't think he means to hurt me. When he attacks, he uses his paws, but he has never extended his claws to scratch my skin. He is very careful with his claws, but vicious with his teeth.

One thing you might try is hissing at him when he bites. I know i may sound odd but i have has success with it. I foster cats pretty often and do this mainly with the kittens. If that does not work you might try setting him up with bitter apple. that is usually a dog training tool but i have used it on a few cats also. When you go to bed rub some on your arms and when he jumps up most cats a deterred by the smell alone and won't do it.

I'll have to see if the local vet here carries some of the apple stuff. Vets double as pet stores in Korea.
Last night at about 130 he chomped me face again, so i did time out in the bathroom, and it worked, but like i said, getting up at 130 every night and waiting ten minutes will make me really exhausted for work in the morning.
Also, I tried hissing, but that makes him attack even more.
Anyway, thanks for the advice. Do you know if bitter apple is safe for my face? ;-)
